PORK RIND AND MEAT EMULSIONS

The pork rind and/or meat emulsion is a product catering the food industry and in particular for the production of mortadella and hot dogs, but it may be used also for other purposes.
The frozen pork rind and/or meat emulsion is a product which must be stored at a temperature ranging from -12°C to -20°C. It is packed on europallets weighing approximately 1000 kg.
Each pallet comprises 50 blocks of unwrapped frozen emulsion with a calibrated weight of 20 kg.
Each pallet is film wrapped for transportation.
The processing of frozen pork rind and/or meat emulsion is particularly delicate and requires precision and experience, as well as adequate and perfectly maintained machinery and rapid freezing tunnels.
The raw materials used in the production of frozen pork rind and/or meat emulsion come only from carefully selected suppliers or from the customers themselves for manufacturing purposes.

RAW MATERIAL RECEIPT AND SELECTION PROCEDURE

We have always paid particular attention to the procedure of receipt and selection of raw materials, as illustrated below.
Frozen meat arrives at the unloading area by refrigerated vehicles, where checks are carried out on receipt, and is then sent to storage in refrigerated rooms. For additives, the integrity of the packaging is checked.
